Protein,Fat for Large breed

What is the highest protein and or fat levels do you feed your adult large breed?

I noticed some of the beef formula foods are really high in protein and fat.With my pup I am staying within a certain level of fat and protein while he is growing but there are some foods I would like to feed that contain beef thats to high in protein.When would it be safe to feed him this?
I switch around between meat sources and beef is one that I cant feed right now but would like to,any suggestions?

We feed Kana EVO as well. He was originally on IAMS then I looked at the ingredients. Then he went to Canidae and now EVO on the recommendation of a breeder who specializes in "stubborn" breeds (mostly Chatahoula Leopard Hounds) to calm their adolescence...

So would it be safe to say at a year old I can feed him the higher protein food? I know pyrs grown in size until 18 months so should I wait till then?
